Ambur Chicken Biryani

Ingredients:

  • Chicken – 1 kg
  • Basmati Rice - 3 cup soaked in water for 30mins
  • Onions (finely chopped) – 3 medium sized
  • Tomatoes (finely chopped) – 3
  • Green chillies (slit) - 2
  • Ginger-garlic paste - 2 Tbsp
  • Mint paste – 2 Tbsp
  • Coriander leaves (chopped) - ¼ cup
  • Mint leaves (chopped) - ¼ cup
  • Turmeric powder - ½ tsp
  • Red chilly powder - 1 Tbsp
  • Biryani Masala powder – 2 Tbsp
  • Garam masala powder – 1 tsp
  • Yogurt (whisked) – 1 cup
  • Cloves - 3
  • Cinnamon – 2 (1” stick)
  • Cardamom pods - 3
  • Lemon juice – 1 tbsp
  • Salt to taste
  • Oil – 4 Tbsp

Instructions:

  1. Heat oil in a cooker. Temper cloves, cinnamon and cardamom. Add ginger-garlic paste and sauté for a while on a low flame.
  2. Add chicken and sauté for a minute. Now add turmeric powder, mint paste, little salt and cook it covered on a low flame for 10 mins. (Don’t add water)
  3. Add chopped onions, tomatoes n green chillies. Cook for a min. Add mint leaves and coriander leaves. Sauté for a while.
  4. Add red chili powder, biryani masala powder, garam masala powder and yogurt. Mix well and let it cook for another 5 mins.
  5. Add water. (for 1 cup of rice 1.5 cups of water) (If masala already has water, check and add water)
  6. Now add soaked rice and mix well. Check for salt and add if required. Squeeze lemon juice and mix.
  7. Close the lid and pressure cook for 2 whistles.
  8. Serve hot with cucumber raita .. :)
