Aloo Palak Gravy

Spinach (Palak) is rich in iron. It also has many health benefits.

I always like to include palak in my daily diet. May be in salad form by blanching the leaves or preparing any side dish.

Here is a recipe, which goes well with rice and rotis. You can also add paneer, corn or mix veggies instead of potato or have only the plain palak gravy. Trust me, it tastes heavenly.

Step by step method :

In a non-stick pan, stir fry potatoes till golden brown. (You can deep fry potatoes.) Keep aside.

Heat little oil in a pan. Add ginger, garlic, green chillies and saute for a minute. Now add spinach (squeeze out excess water) and fry for a while. Add little salt and sugar. Once done, allow this mixture to cool. Grind to a smooth paste.

In a kadai, add the remaining oil. Once it is heated, add saunf and allow it to splatter. Now add onions and fry till translucent. Now add the tomatoes and fry until mushy. Add garam masala powder and mix well.

Now add the spinach paste and a cup water. Allow it to boil.

Add the fried potatoes in the gravy and mix gently. Cover the pan and allow the gravy to boil on medium flame.

Once the gravy is thickened, switch off the flame.

Garnish with cream and chat masala. Serve hot with rice or rotis.

fried potatoes in spinach gravy

Ingredients:

  • Spinach (washed and roughly chopped) – 4 cups
  • Potato (Boiled and cut into cubes) – 1 cup
  • Onions (finely chopped) – 1 cup
  • Tomato – ½ cup
  • Ginger (finely chopped) – 1 Tbsp
  • Garlic cloves – 5-6
  • Green Chillies – 2
  • Garam masala powder – 1 tsp
  • Sugar – ½ tsp
  • Saunf – a pinch
  • Oil – 1 Tbsp
  • Salt to taste
  • Cream and chat masala for garnishing
