Mint Paneer dry

This is a very easy peasy recipe with minimum ingredients. The refreshing flavor of mint compliments very well with paneer. A quick starter or snack!!

Mint paneer dry

A quick and easy starter with paneer and mint

Ingredients:

  • Paneer - 200 gms
  • Mint leaves - 1 bowl (tightly packed) 
  • Garlic (chopped) - 1 tbsp
  • Onion (cubed) - 1 large 
  • Capsicum (cubed) - 1 large
  • Green chilli - 1 (you can use as per your preference) 
  • Oil - 4 tbsp 
  • Lemon juice - 5 to 6 drops 
  • Salt to taste 

Instructions:

  1. Cut paneer into cubes and keep aside.
  2. Wash mint leaves very well and grind to thick paste adding very little water(approx 5 to 6 tbsp). Keep aside. 
  3. In a pan, add oil. On medium flame, add paneer and fry on all sides until golden brown. 
  4. Once done, put it in a bowl of warm water. (this prevents paneer from getting chewy) 
  5. In the same oil, add garlic. Let it fry till golden brown. 
  6. Add Onions, and fry till translucent. 
  7. Now add capsicum and fry for 5 minutes. Keep it crunchy. 
  8. To this add the ground paste and saute until moisture evaporates. 
  9. Add slit green chilli and mix. 
  10. Add the fried paneer squeezing out from the water.  Mix well. 
  11. Add salt at this point. Mix well until paneer is well coated with the mint paste. 
  12. Once done. Switch off the flame. 
  13. Squeeze lemon juice. Give it a quick mix. 
  14. Tadaa! A quick, yummy and easy starter is ready.  Serve hot. 

Notes:

Use only leaves. Don't use the stem of mint leaves. It will turn bitter. And whole dish will get spoilt.  
For healthy option, you can add paneer without frying it.
